Coconut Rice

You know those weird cravings you get randomly. Yeah, well, I had one of them recently..craving to eat coconut rice (!?). I know, beyond weird but hey, we are all human!

Coconut rice is a common South Indian Dish hence why you don’t see it in my kitchen often or at all (for those of you just tuning in, I am north Indian). Follow my steps below to whip up some for yourself. Finger-lickin good.

  1. Cook desired amount of white rice and cool completely.
  2. Heat ghee or oil in a pan, add cumin, mustard, dals and cashews. When the dal turns golden, add ginger, green chili, curry leaves and red chili. Sprinkle hing (Asafoetida).
  3. Add coconut, rice and salt. Off the heat. Stir everything well.
  4. Serve coconut rice with a simple curry or yogurt.
